Bathing Beauty

We have had such a warm spring, and for a little girl that loves being outside as much as Vivi does, there's not much more to ask for.  As nice as the weather has been, we continue to pray for rain for the Wichita Falls area as well as the rest of Texas.  In the meantime, we will take advantage of the warm weather.  These days playing in the kiddie pool and running through the sprinkler are some of Vivi's favorite things.  And she looks so adorable in her neon swimsuit.

Nana

My mom came to visit for a week after Cade was born.  It was so nice to have her around to help with both kids as well as to cook us some wonderful meals.  Unfortunately, we did not take many pictures during her time here and have no pictures with her and the kids.  Sad.

Four Generations

After arriving home from the hospital Trey's parents and grandparents came over to spend some time with us and the babies.  It was extra special, as we were able to take pictures of all FOUR David's together.

Happy Birth Day Cade!

Sweet baby Cade was born yesterday morning and is so loved!  There was a flock of family waiting for the news of his birth and many of them met him when he was just minutes old.  Here are some pictures from his special day.  We have been blessed with a beautiful, healthy, BIG boy and couldn't be any happier.  





David Alan IV is HERE!

Cade was born yesterday morning at 9:31 am via c-section. We are both doing great! He is a big healthy boy that we are so in love with. It is amazing how much he looks like Vivi did when she was a newborn. It will be interesting to see how they look alike and how they are different as they each grow up! I will post pictures as soon as I have some available. Here are his stats.

Weight: 9 pounds 0 ounces
Length: 20 3/4 inches
Head Circumfrence: 14 3/4 inches

Fort Worth Family Weekend

We decided to take a little trip to Fort Worth and spend some time as a family of three before Cade arrives. We woke up bright and early Saturday morning, packed our bags, threw everything into the car, and hit the road.  We arrived in Fort Worth, just in time for lunch and were joined by my sweet friend Kelsey.  Due to the lack of decent Mexican food in the Falls, we ate at one of our favorite spots, Uncle Julios, and enjoyed good food and good company.

From there, Trey, Vivi, and I made our way to the Fort Worth Museum of Science and History.  What a cool place!  In all the time that I lived in FW I never took the opportunity to see the exhibits at this museum.  The Energy Blast Exhibit was right up Trey's ally, as it brings together different aspects of the energy resources that we find in North Texas.  It was cool to see all of the different things that he deals with at work on a daily basis.  We also saw the DinoLabs exhibit, where Vivi sat in a dinosaur footprint!  Of course the Fort Worth Children's Museum was a huge hit with Vivi!  She got to play on an dragon head, drive an ambulance and explore all sorts of other interesting and hands on exhibits.  I can't wait to take her back again since she wasn't feeling at her best.

Following our museum visit, Vivi and I met back up with Kelsey at University Park Village for a little shopping at some of our favorite stores.  I picked up a couple of cute things for Vivi and Cade from BabyGap and some wonderful things for myself at Anthropologie.  The weather was nice enough for us to walk around outside and get some fresh air.  What a wonderful way to spend the afternoon!

That night we got a babysitter to come to our hotel and watch Vivi while Trey and I went to Del Frisco's for dinner with our friends Blake and Toni.  Del Frisco's never disappoints, and we enjoyed some delicious food with our sweet friends.  Our original intention was to see a movie before dinner, but we had forgotten how much planning has to go into seeing a movie in Fort Worth, especially at the ever popular Movie Tavern.  If only we would get one here in WF...

All in all, it was a wonderful weekend away as a family.  It was great to spend some quality time together experiencing a city that we love and called home for a good 8 years as well as see some friends that we miss dearly.  Thankfully the drive to Fort Worth is not a long one, and will enable us to continue to visit!

Foodie Fridays

Last weekend when we were at the ranch I mentioned that we made these fajitas, and I thought that I would share the recipe with everyone.  It is another Cooking Light recipe.  The marinade for the meat and veggies is delish and it is an easy meal for a night with the family or an backyard barbecue with family and friends.  I hope you all enjoy it as much as we do!

Beef and Chicken Fajitas with Peppers and Onions

Ingredients

Marinade:
1/4 cup olive oil
1 teaspoon grated lime rind
2 1/2 tablespoons fresh lime juice
2 tablespoons Worcestershire sauce
1 1/2 teaspoons ground cumin
1 teaspoon salt
1/2 teaspoon dried oregano
1/2 teaspoon ground black pepper
2 garlic cloves, minced
1 can beef broth

Fajitas:
1 pound flank steak
2 chicken breasts
2 red bell peppers, cut into strips
2 green bell peppers, cut into strips
1 large Vidalea onion, cut into wedges
Flour tortillas
Toppings of choice (we like sour cream, pico, cheese, and cilantro)

Preparation

To prepare marinade, combine first 10 ingredients in a large bowl and set aside.

To prepare fajitas, cut fat from steak and score a diamond pattern on both sides of the meat.  Combine steak, chicken and 1 1/2 cups of marinade in a large zip lock bag.  Seal and marinate in refrigerator 4 hours or overnight, turning occasionally.  Combine remaining marinade and veggies in a seperate zip lock bag.  Seal and marinate in refrigerator 4 hours or overnight, turning occasionally.  Note: obviously the longer everything marinates the better!  I usually make it in the morning and let it sit all day.

Prepare grill.

Remove steak and chicken from bag, discard marinade.  Remove vegetables from bag, reserve marinade.    Place reserved marinade in a small saucepan, set aside.  Place steak, chicken and vegetables on the grill (I use a grill basket for the veggies or sometimes just cook them in the oven).  Cook 8 minutes on each side, or until desired degree of doneness.

Wrap tortillas tightly in foil and place on grill the last 2 minutes of cooking time.  Bring reserved marinade to a boil and reduce.  Cut steak and chicken diagonally across the grain into thin slices.  Place steak, chicken, and vegetables on a platter and drizzle with reduced marinade.  Enjoy!
